Flavors & Scents: Meu Yogoberry poderia ser meu perfume/ My Yogoberry would be my perfume

Neste verão descobri uma delícia saudável e saborosa cuja febre começou no Rio de Janeiro: a loja de frozen yogurt , Yogoberry, que eu frequento assiduamente aqui em São Paulo e estou viciadíssima nesta perdição refrescante com sabor de sorvete e cara de pirâmide olfativa de perfume.

Não que eu veja perfume em tudo que é lugar, mas já é sabido que o cheiro de  frutas frescas, secas, chocolate e tantos outros ingredientes que comemos são, em sua maioria, parte dos perfumes que usamos e a gastronomia dialoga bastante com a perfumaria, tanto que muitos perfumistas apreciam a boa culinária. Desde a primeira vez que comi meu primeiro Yogoberry e vi as opções de acompanhamentos, os chamados toppings, os quais eu poderia adicionar ao meu frozen yogurt, eu comecei a variar meus sabores de acordo com o perfume que gostaria de usar, como uma grande brincadeira de verão, então eu seleciono o gosto final do meu frozen como se ele fosse meu perfume (acredite!). E acabei descobrindo que, sensorialmente, esta era uma forma de eu relacionar sabores e cheiros com criatividade assim como tenho feito em minhas experiências na cozinha e assim como a indústria de aromas e fragrâncias também o faz em seus negócios. Além disso, percebe-se que o brasileiro que frequenta Yogoberry tem reforçado o culto às frutas vermelhas como o morango, a framboesa e o mirtilo e as mais tropicais como o kiwi e a manga, além da sensação da tendência atual na gastronomia em alguns restaurantes brasileiros que já é encontrada em perfumes: a exótica lichia. Hmmm!

Meus sabores preferidos desta delícia são morango com crisps de chocolate e castanhas picadas e manga com coco ralado e marshmallow cremoso,mas há muitas outras possibilidades que eu descubro a cada semana, afinal meu Yogoberry poderia ser meu perfume.

This summer I have discovered a healthy and tasty delight whose fever started in Rio de Janeiro: the frozen yogurt store named  Yogoberry, that I have been visiting every week in São Paulo and I have been addict for this refreshing temptation  with ice cream flavor and ingredients similar to a perfume olfactive pyramid.

It is clear that the scent of fresh fruits, dry fruits, chocolate and so many others compounds found in gastronomy  is reproduced as part of the perfume compositon we wear, so gastronomy keeps an intimate dialog with the perfumery and it is known many perfumers enjoy a good culinary. Since the first time I ate my first Yogoberry and saw various options of toppings (ingredients that can be included in the frozen yogurt), I started to vary its flavors according to the perfume I would like to wear, as a funny summer play,then I select the final taste of my frozen as it were my perfume (yeah!) And I have discovering that, sensorially, this is a way of relating flavors and scents with creativeness as I have done in my experiences in the kitchen as well as  the flavors and aromas industry also does in their businesses. Besides, Brazilians that consume Yogoberry have shown that we here love berries such as strawberry, raspberry and blueberry and the tropial fruits such as kiwi and mango, moreover the recent fever aligned to the recent trendy in gastronomy  in some restaurants also found in some perfumes is the exotic litchi. Yummy!

My favorite flavors of this delight are strawberries with chocolate crisps and  dry nuts (hazelnuts, almonds) and mango with coconut and creamy marshmallow, but there are others possibilities that I have found each week, finally  Yogoberry would be my perfume.

Fabulous Fragrant Flavours Series: A Scented Gourmet Experience

As relações entre o sabores e o cheiros estão muito mais perto do que imaginamos, não à toa que a indústria de fragrâncias é irmã da indústria de aromas e, a mesma empresa de FF (fragrances and flavors) que desenvolve o cheiro de um perfume, desenvolve um aroma para aquela bebida ou alimento de sua preferência. Grandes casasd de fragrâncias líderes como Firmenich, Givaudan, IFF, Symrise, Mane, Drom, entre outras, têm áreas para desenvolvimento de aromas e perfumes para diversas categorias como: alimentos, higiene pessoal, cosméticos, perfumaria e cuidados com a casa.

Temos uma série de cheiros especiais na gastronomia e que são usados na perfumaria e estudados por grandes perfumistas que aplicam também em seu processo criativo o que aprendem com a comida e os vinhos. Uma vez conversando com um grande perfumista, ele me disse que damasco fresco fica perfeito com carne de porco, perfumando a carne (e eu anotei a dica!, muito entusiasmada). Por isso, vimos especiarias e/ou ervas como manjericão, sálvia, canela, cravo, cominho, etc, até aquelas notas deliciosas gustativas como o chocolate, o praline, a baunilha,etc dando um toque especial a nossos perfumes preferidos.

Para mim, foi inevitável não me apaixonar mais ainda pela culinária e suas interações com os cheiros, tanto que assumo: eu gosto de cozinhar e estou aprendendo mais e mais, mas não qualquer prato  (eu preciso que ele seja como um perfume em forma de comida), logo ando aperfeiçoando meus dotes gastronômicos, pouco a pouco, colhendo os benefícios de desenvolver ainda mais o meu senso de olfato e as tentações da comida. Minha amydala e o meu estômago agradecem!

Na série Fabulous Fragrant Flavors (Fabulosos sabores perfumados), estou fazendo um laboratório que sempre quis lançar no Perfume da Rosa Negra, uma relação entre cheiro e sabor e a relação íntima entre eles então, a cada mês, eu venho da cozinha direto para cá. A idéia  básica é me inspirar e te inspirar a unir estes dois grandes sentidos e desfrutar uma grande experiência olfativa que afeta diretamente o seu paladar.  Sem  blá blá blá, somente algumas notas especiais em uma receita especial  para aguçar seus sentidos e algumas dicas de perfumes no final da matéria.

TORTA PRESTÍGIO 

 

Esta torta é muito simples de fazer e leva só 55 minutos.

Ela está aqui porque celebra as notas

de Coco e Chocolate , altamente apetitosas e são as base

de qualquer torta prestígio, além disso são excelentes se combinadas na pele.  A escolha desta receita é porque não há tantos ingredientes farinacéos e tanta massa, logo permite que se desfrute bem o coco e o chocolate.

Parece até um perfume!!!!

Ymmyyyy! 

Você vai precisar de :

1 pacote de biscoito de chocolate recheado

50 gramas de margarina

1 lata de leite condensado

2 colheres (sopa) de amido de milho

1 1/2 xícara(chá) de leite

1 gema

50 gramas de coco ralado

200 gramas de chocolate meio amargo picado

1/2 lata de creme de leite.

Antes de chegar neste super creme de coco, é preciso preparar a massinha de chocolate que vai forrar a forma. Já imaginou o cheiro de biscoitos triturados? Tão convidativo! Você bate no liquidificador os biscoitos até obter uma farinha e depois junte a margarina até formar uma farofa. Forre o fundo de uma forma de 22 cm de diâmetro e leve ao forno por 10 minutos ( 220º C). Para fazer o creme do coco, coloque em uma panela o leite condensado, a gema, o amido de milho(dissolvido no leite) e o coco ralado, leve ao fogo mexendo sem parar até engrossar. Após isto, retire do fogo e deixe esfriar à parte. O gosto e o cheiro é tão bom que parece uma cocada!

 Sabe este chocolate cremoso que está na foto acima? É chocolate amargo derretido com creme de leite! Não há melhor cheiro de chocolate do que cheirar ele assim, quente e derretido. Para fazer o creme de chocolate, derreta-o em banho maria e coloque o creme de leite, mexendo sempre sem parar até derreter todo o chocolate. Pronto! Ele está perfeito, perfumado como um acorde de milky bitterchocolate!

 

Aiiii quanto chocolate! Quase enfiei meu nariz na torta!

Já sabe como chegar até aqui, não é mesmo? Basta colocar o creme de coco

e por cima o de chocolate.  Leve a forma para a geladeira. Coragem!

Relationships between flavors and scents are much more closer that we imagine about, then it is easy to understand why the fragrances industry is sister of flavors industry and, the same FF (fragrances and flavors) company which develops the scent of your perfume, also develops the flavor of that beverage and food you like most. Great leading companies such as  Firmenich, Givaudan, IFF, Symrise, Mane, Drom, among others, have areas to the development of flavors and fragrances for diverse categories such as: food, personal care, cosmetics, perfumery and home care. 

We have a series of special smells in the gastronomy and that are used in the perfumery  and studied by great perfumers which apply their aroma knowledge in their creative processes bringing to the perfumery what they learn about food and wine. Once I was talking to a  renowned perfumer and he told me that fresh apricot is perfect when combined to pig flesh, fragrancing it (and I wrote his tip, very exciting). Because of that, we see spices and/or herbs such as basil, sage, cinnamon, clove, cumin, etc till those delicious gourmand notes such as chocolate, praline, vanilla, etc that provide a delightful touch to our favorite perfumes.

For me, it was unavoidable not fall in love by culinary and its interactions with scents, so much that I confess: I like cooking and I have learnt more and more, but not any dish please (I need to think the recipe is like a perfume in form of food) , therefore I have improving my gastronomic skills, little by little and having the benefits of developing my smell sense and my food taste temptations. My amygdala and my stomach say thanks!

In Fabulous Fragrant Flavors  Series  I am doing what I always wanted to release at Perfume da Rosa Negra, a relationship between scent and flavor and how they are connected, in each month, I come from the kitchen to here. The basic idea is inspire myself and inspire you to join these two senses and enjoy the great olfactive experience that affects directly your taste sense. Without  blah, blah, blah, only some special notes in a special recipe to indulge your senses and, at the end of the article, some perfume tips for you.

TORTA PRESTÍGIO

PRESTIGE PIE

This pie is very simple and you spend only 55 minutes

It is here because celebrates notes of

Coconut and Chocolate , highly delicious and are the base

for any torta prestígio (prestige pie),besides they are excellent when combined on skin.  The selection of this recipe is because there are not so many farinaceous ingredients and much dough, therefore it allows you enjoy well the coconut and chocolate.

It seems a perfume!!!!

Ymmyyyy! 

You will need

1 packet of chocolate cookies (something like Oreo, but filled by chocolate)

50 gr margarine

1can of condensed milk

2 soup spoons corn starch

1 1/2  cups (tea) milk

1 egg yolk

50 gr grated coconut

200 gr bittersweet chocolate in pieces

1/2 can of milk cream

Before having the coconut cream in front of you smelling it with your nose, you need to prepare a easy chocolate paste to cover the pie baking form. Have you ever imagined some crushed cookies? It is so inviting to think about!  Mix the cookies in the blender until obtaining a flour, then join it the margarine and mix them well to have a manioc flour. Cover the bottom of the baking form of 22 cm of diameter with this paste. Heat up your oven to about 220º C) and take it to the oven. To make the coconut cream, put in a pan  the condensed milk, the egg yolk, the corn starch (dissolved in the milk) and the grated coconut, melt them over the fire in the pan, mixing it withoug stopping until become thicker.  When it is read, take it out from the fire and let it cool apart. Its flavor and its scent is so good that seems a coconut-sugar candy!

 Do you know that chocolate cream in one of the photos above? It is bittersweet chocolate melted with milk cream!  There is anything better than smelling pure chocolate scent , hot and melted. To make the chocolate cream, melt it in double boiler and add the milk cream, mixing always without stopping until the chocolate is completely melted. It is ready! It is perfect , fragrant like a milky bitterchocolate accord!

Woow, so much chocolate! I am almost putting my nose in the pie!

Have you known how to get here, haven't you? Just put the coconut cream above the paste and then after the chocolate cream.

.  Take it to refrigerator to serve it frozen. Be brave!
To give a special touch, cover it with grated coconut or chocolate slices!

Smell deeply this delight!

And the best part, feel the scent and the flavor of the sweet coconut with the bitter chocolate, an irresistible contrast that make us to think of a imaginary fragrance!

Perfume Review: Incredible Me, Escada

Incredible Me é a fragrância da fashion house alemã Escada fundada em 1976 pela ex top model Margaretha Ley e seu marido Wolfgang Ley, cuja divisão de beleza foi criada no começo dos anos 90. Na ocasião, Escada lançou seu primeiro perfume Escada. Incredible Me (2008) é o antecessor do mais recente lançamento da marca Desire Me e apresenta um oriental baunilha, bem doce e jovial, na medida exata para garotas que adoram moda, ser incríveis fashion ladies, absolutamente glamurosas e sensuais.

Para criar um efeito gourmand distinto do que é encontrado em perfumes abaunilhados, foi adicionado na composição uma nota exótica deliciosamente gustatória que é o Tiramisu que, aliás, é um doce maravilhoso, uma absoluta perdição calórica que vale cada garfada.  Para quem desconhece esta famosa delícia, o Tiramisu é uma sobremesa italiana cujas camadas de bolo molhadas com rum, café e vinho Marsala são intervaladas com queijo mascarpone e salpicadas com cacau em pó. No Brasil, o Tiramisu também é feito como um pavê e é  reinventado com biscoitos, conhaque, cream cheese e chocolate, respectivamente substituindo o pão de ló, o rum, o queijo e o cacau. As fragrâncias da casa acompanham um estilo jovem fashionista, mas não muito pueril. Normalmente, são fragrâncias se posicionam nos extremos, ou são  mais frescas  e versáteis ou bem adocicadas e limitadas a quem aprecia toques gourmands e frutais intensificados por notas ambaradas e abaunilhadas. O que faz de Incredible Me um perfume agradável e não tão enjoativo  como  a linha Escada Magnetism, por exemplo, é a textura gourmand sensual e comfortável com uma envolvente combinação da baunilha com o exótico tiramissu , ambos com um floral soft e delicado que evita que o perfume seja mais um abaunilhado elementar.

A entrada é mais fresca com foco na clementina mas já antecipa um cheiro mais alcóolico como se as gotas de rum que colocamos em uma receita culinária estivessem perfumando o ar da cozinha sugestivamente. A aproximação do coração da fragrância dá uma sensação de cheirar a um bolo feito de chocolate amargo temperado com um leve tom floral frutal que provê um cheiro similar a um biscoito recheado ludicamente coberto com um creme de pêonias tão delicadamente "girly" como toda jovem menina mulher.

Esta referência equilibrada do floral é a própria nuance de uma exótica orquídea que está associada ao feminino  e também à influência Asiática que eles incluiram na fragrância, alinhando com isso , o equilíbrio entre o Leste e o Oeste, a Ásia (Orquídea Miva) e a Europa (Tiramisu), exaltando uma sobremesa Tiramisu servida com uma orquídea ao lado, a beleza visual e olfativa do conceito de Incredible Me.

Mais tarde, o Tiramisu abraça não só o paladar guloso que urge  por uma travessa inteira do pavê dos deuses, mas o olfato já se rende por completo. Aquela sensação sedosa de um cheiro abaunilhado com toques de um pão de ló de tiramisu é a melhor e mais instigante fase do perfume. Embora Incredible Me não seja um perfume masterpiece e nem tem a intenção de sê-lo, ele foge daquela baunilha clássica que costumam combinar com âmbar e sândalo em perfumes abaunilhados orientais. Ele faz o que todo perfume gourmand tem que fazer bem. Ele traz novos toques gustativos, ele desperta a fome ou, no mínimo, a doce gula.

Incredible Me is the fragrance of german fashion house Escada founded in  1976 by ex top model Margaretha Ley and her husband Wolfgang Ley, whose beauty division was created in the beginning of 90's . In that occasion, Escada released its first Escada perfume. Incredible Me (2008) is the antecessor of Escada's most recent fragrance release Desire Me  and features an oriental vanilla, very sweet and youthful exactly to target young women who adore fashion, being amazing fashion ladies, absolutely glamourous and sensual.

To create a distinctive gourmand effect in comparison what is found in average vanillic perfumes, it was added in this composition an exotic and delightful gustative note which is the Tiramisu  that, by the way, is a wonderful dessert, a great caloric temptation which worths each piece.  For those who don't know this famous delight, Tiramisu is an Italian dessert whose cake layers are soaked in rum, coffee and Marsala wine and intermixed with mascarpone cheese and powdered by cocoa powder.In Brazil, Tiramisu also is prepared such as a pav and is reinvented with biscuits, cognac, cream cheese and chocolate, respectively replacing the cake, rum, cheese and cocoa. Besides Tiramisu, Incredible me has notes of clementine, honeysuckle, Miva orchid, vanilla and sandalwood.

Escada fragrances follow a fashionable style, but not so puerile. Normally, they are fragrantly positioned in both extremes, that is, or they are fresher and versatile or else they are sweeter and suitable for wearers who appreciate gourmand touches and fruity ones intensified by ambery and vanillic notes.  What becomes Incredible Me a pleasant fragrance and not so sugared annoying such as Escada Magnetism range , for example, is the sensual and comfortable gourmand texture with an enveloping combination of vanilla with the exotic  tiramissu , both with a soft and delicate floral that avoids that the perfume be one more vanillic ordinary one.

The opening is fresher focused on clementine but without delay advances a more alcoholic scent as if rum drops were added  in a culinary recipe and would perfume in a suggestive way the kitchen atmosphere. The coming of the mid notes provokes the sensation of smelling a cake prepared by bitter chocolate flavoured with a slight floral fruity tone which provides a scent similar to a biscuit filled (in a ludic way) by a peonies cream so delicately "girly" like any young "woman girl"

This balance reference in the floral is the own nuance of the exotic orchid which is associated to the femininity and also to the Asian influence included in the fragrance, then aligning the balance between the East and West, the Asia (Miva orchid) and the Europa(Tiramisu), evoking the Tiramisu dessert served with an orchid on a dish, the visual and olfactive beauty of Incredible Me concept.

Later Tiramisu embraces not only the gluttonous taste which urges  a whole dish of this God's dessert, but also the olfaction is surrendered by it.  That soft sensation of a vanillic scent with touches of Tiramisu cake  is the best and more delightful phase of the perfume. Although Incredible Me isn't a  masterpiece and neither has this intention, the fragrance skips the classic vanilla which is widely combined with amber and sandalwood in vanillic orientals perfumes.  Incredible me does what all gourmand perfumes should do: it brings new gustative touches and awakes  the hunger or, at least,  some sweet greed.

Frutas Cítricas
